So let’s settle in for a while and chat away about what’s been happening and what’s on offer!   Halloween wedding for scary skeleton couple Newlyweds Steve and Karen Vailes got into the spirit of Halloween when they had a spooky wedding at a Bristol Register Office, with everyone coming dressed as a ghoulish character. The couple were both dressed as skeletons, with the bride, Karen, wearing a black outfit instead of the usual white wedding dress. 'I'm not a white dress person – I don't like to be the centre of attention. At first I thought we could all turn up in tennis gear because Steve is a keen player but we might have been a bit cold,' she told Bristol Evening Post. 'I wanted a good, fun day and with it being Halloween, thought that would be a good theme.' The guests were also convinced to come as creatures of the night, with some dressing as witches and others donning vampire costumes. The groom, Steve, admitted he was a bit hesitant at first but loved it once he got into the swing of things. 'I did have reservations but once my face was painted, I thought it was terrific and couldn't wait,' he said. Karen who is a housekeeper at a retirement complex and Steve a lorry driver plan to go on a honeymoon next year but have ruled out Transylvania as a possible destination.     The weekly and monthly October promotions have come to an end. Keep 'em coming.     A delicious and hearty recipe with in season ingredients that is perfect for the cold November evenings. I love risotto with anything! LOL! Butternut squash risotto Serves 6 Ingredients 1L chicken stock 250ml water 2 tbsps extra-virgin olive oil 1 small onion, chopped 2 cloves garlic, grated or chopped 400g Arborio rice 250ml dry white wine 1 (280g) box cooked frozen butternut squash Nutmeg, grated, to taste Salt and pepper 30g butter 7 or 8 leaves fresh sage, slivered 80g grated Parmigiano-Reggiano Directions Step 1: Bring 1L stock plus 250ml water to a simmer in a sauce pot then reduce heat to low. Step 2: Heat a medium skillet over medium to medium-high heat with extra-virgin olive oil. When oil ripples, add the onions and garlic and soften 2 to 3 minutes. Add rice and toast 2 to 3 minutes more. Add wine and cook it out completely, stirring occasionally, 2 to 3 minutes. Step 3: Ladle in stock in intervals, a couple of ladles at a time. Allow liquids to evaporate each time. Risotto will cook 18 minutes, total, from the first addition of liquid. Step 4: Defrost the squash in the microwave in a dish to collect any liquids. Stir the squash into the rice the last 3 minutes of cook time. Season to taste with nutmeg, salt and pepper.
